The Rum Vault is the result of years of sourcing, collecting, and curating — built by a team with deep roots in Caribbean culture and an obsession with the craft of rum. Every bottle in the collection was chosen for a reason: its story, its rarity, its connection to the people and places that made Caribbean rum the most culturally rich spirit category in the world.
We carry expressions from Jamaica, Barbados, Martinique, Trinidad, Guyana, Haiti, Cuba, Panama, Guatemala, Belize, and West Africa — organized by region, age, and production style on our signature Interactive Rum Wall.

Our signature rum education experience — a guided journey through Caribbean rum culture, history, and craft. Led by our resident rum sommelier, the Rum Academy covers the history of rum from sugarcane to glass, regional production methods, tasting technique, and cocktail creation. Guests leave with a tasting journal, a curated rum flight, and a cocktail they made themselves.

Rum Education
Rum is not just a spirit. It is the liquid history of the Caribbean — inseparable from the story of the African diaspora, colonialism, and the cultures that survived and thrived despite everything.
Rum is born in Barbados — the first recorded distillation of sugarcane molasses into a spirit. Enslaved Africans on sugar plantations discover that molasses, a byproduct of sugar production, can be fermented and distilled. The spirit they create will change the world.
Rum becomes the currency of the Atlantic slave trade — distilled in the Caribbean, traded for enslaved people in West Africa, used to purchase sugar in the Americas. The history of rum is inseparable from the history of slavery, colonialism, and the African diaspora.
The invention of the continuous still transforms rum production — creating lighter, more refined spirits. Barbados, Jamaica, and Trinidad emerge as the dominant rum-producing nations, each developing a distinct style that reflects their terroir and culture.

The centerpiece of the Rum Vault is our floor-to-ceiling Interactive Rum Wall — a curated display of over 150 expressions, organized and illuminated to tell the story of Caribbean rum at a glance. Every bottle is tagged with its origin, age, production method, and tasting profile.
Guests can explore the wall independently, guided by our digital tasting map, or with our sommelier who can pull any bottle for a taste, a story, or a deep dive into its provenance.
